Ingredients: For the meat:
- 2 pounds chicken or lamb, cut into pieces
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1 teaspoon ground turmeric
- 1 teaspoon ground cinnamon
- Salt and pepper to taste
For the rice:
- 2 cups long-grain rice
- 4 cups chicken or beef broth
- 1/2 cup tomato paste
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground turmeric
- Salt to taste
Instructions:
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until they are softened.
- Add the meat pieces to the pot and cook until they are browned on all sides.
- Stir in the ground cumin, ground coriander, ground turmeric, ground cinnamon, salt, and pepper. Cook for a few minutes to allow the flavors to meld.
- Pour enough water to cover the meat, reduce the heat, cover the pot, and simmer until the meat is tender and cooked through. This may take about 1 to 2 hours, depending on the type of meat.
- While the meat is cooking, prepare the rice. Rinse the rice under cold water until the water runs clear, then drain.
- In a separate pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until they are softened.
- Stir in the ground cumin, ground coriander, ground turmeric, and salt. Cook for a minute to release the flavors.
- Add the rice to the pot and stir to coat the grains with the spices and oil.
- In a small bowl, mix the tomato paste with a little water to make a smooth paste. Add the tomato paste to the rice and stir well to distribute it evenly.
- Pour in the chicken or beef broth and bring the mixture to a boil. Reduce the heat to low, cover the pot, and simmer until the rice is cooked and the liquid is absorbed, about 15-20 minutes.
- Once the meat is cooked and the rice is ready, arrange the rice on a serving platter and place the cooked meat on top.
