YEMEN: YEMENI ZURBIAN

Ingredients: For the meat:

  • 2 pounds chicken or lamb, cut into pieces
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cinnamon
  • Salt and pepper to taste

For the rice:

  • 2 cups long-grain rice
  • 4 cups chicken or beef broth
  • 1/2 cup tomato paste
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • Salt to taste

Instructions:

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until they are softened.
  2. Add the meat pieces to the pot and cook until they are browned on all sides.
  3. Stir in the ground cumin, ground coriander, ground turmeric, ground cinnamon, salt, and pepper. Cook for a few minutes to allow the flavors to meld.
  4. Pour enough water to cover the meat, reduce the heat, cover the pot, and simmer until the meat is tender and cooked through. This may take about 1 to 2 hours, depending on the type of meat.
  5. While the meat is cooking, prepare the rice. Rinse the rice under cold water until the water runs clear, then drain.
  6. In a separate pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until they are softened.
  7. Stir in the ground cumin, ground coriander, ground turmeric, and salt. Cook for a minute to release the flavors.
  8. Add the rice to the pot and stir to coat the grains with the spices and oil.
  9. In a small bowl, mix the tomato paste with a little water to make a smooth paste. Add the tomato paste to the rice and stir well to distribute it evenly.
  10. Pour in the chicken or beef broth and bring the mixture to a boil. Reduce the heat to low, cover the pot, and simmer until the rice is cooked and the liquid is absorbed, about 15-20 minutes.
  11. Once the meat is cooked and the rice is ready, arrange the rice on a serving platter and place the cooked meat on top.
  12. Serve the Zurbian hot and enjoy the delicious combination of spiced rice and flavorful meat.
