Ingredients:
For the filling:
- 1 pound ground beef or lamb
- 1 onion, finely chopped
- 2 carrots, peeled and diced
- 1 cup frozen peas
- 2 cloves of garlic, minced
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 cup beef or vegetable broth
- 1 teaspoon dried thyme
- Salt and pepper to taste
For the mashed potato topping:
- 2 pounds potatoes, peeled and cut into chunks
- 4 tablespoons butter
- 1/4 cup milk
- Salt and pepper to taste
Instructions:
- Preheat the oven to 400°F (200°C).
- In a large skillet or frying pan, brown the ground beef or lamb over medium heat. Drain any excess fat.
- Add the chopped onion, diced carrots, minced garlic, and frozen peas to the skillet. Cook for about 5 minutes until the vegetables are slightly softened.
- Stir in the tomato paste, Worcestershire sauce, beef or vegetable broth, dried thyme, salt, and pepper. Simmer the mixture for about 10 minutes, allowing the flavors to meld together and the sauce to thicken slightly. Remove from heat.
- Meanwhile, cook the potatoes in a large pot of salted boiling water until tender, about 15-20 minutes. Drain the potatoes and return them to the pot.
- Add the butter and milk to the pot with the potatoes. Mash them together until smooth and creamy. Season with salt and pepper to taste.
- Transfer the meat and vegetable mixture to a baking dish. Spread the mashed potatoes evenly over the top, creating a smooth layer.
- Place the baking dish in the preheated oven and bake for about 25-30 minutes, or until the top is golden brown and the filling is bubbling.
- Remove the Shepherd’s Pie from the oven and let it cool for a few minutes before serving.
