BRICK

Ingredients:

  • 8 sheets of brick pastry or phyllo dough
  • 4 eggs
  • 1 can of tuna, drained
  • 1 small onion, finely chopped
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh cilantro
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • Vegetable oil for frying
  • Lemon wedges for serving

Instructions:

  1. In a bowl, combine the eggs, tuna, chopped onion, parsley, cilantro, cumin, salt, and pepper. Mix well to combine.
  2. Take one sheet of brick pastry or phyllo dough and place it on a flat surface. Brush it lightly with water or oil to make it more pliable.
  3. Spoon about 2 tablespoons of the egg and tuna mixture onto the center of the pastry sheet, leaving a border around the edges.
  4. Fold one side of the pastry over the filling to form a triangle. Continue folding the pastry in a triangular shape, tucking in the edges as you go, until you reach the end of the sheet. Repeat with the remaining pastry sheets and filling.
  5. In a large skillet, heat vegetable oil over medium heat. Carefully place the briks in the hot oil and fry them until golden brown and crispy on both sides. This usually takes about 2-3 minutes per side. Transfer the fried briks to a plate lined with paper towels to drain excess oil.
  6. Serve the Tunisian briks hot, accompanied by lemon wedges for squeezing over the pastry. They can be enjoyed as a snack, appetizer, or part of a larger meal.
