Ingredients:
- 8 oz. dried rice noodles
- 2 tbsp vegetable oil

- 1 cup bean sprouts
- 2 tbsp fish sauce
- 2 tbsp tamarind paste
- 1 tbsp brown sugar
- 1/4 tsp red pepper flakes
- 1/4 cup chopped roasted peanuts
- 2 green onions, chopped
- 1 lime, cut into wedges
Instructions:
- Soak the rice noodles in warm water for 15-20 minutes, until they are soft and pliable. Drain and set aside.
- In a wok or large skillet, heat the vegetable oil over medium-high heat. Add the garlic and cook for 30 seconds, until fragrant.
- Add the eggs and scramble until cooked through. Add the shrimp and cook for 2-3 minutes until they turn pink.
