  • 8 oz. dried rice noodles
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 2 eggs, lightly beaten
  • 8 oz. shrimp, peeled and deveined
  • 1 cup bean sprouts
  • 2 tbsp fish sauce
  • 2 tbsp tamarind paste
  • 1 tbsp brown sugar
  • 1/4 tsp red pepper flakes
  • 1/4 cup chopped roasted peanuts
  • 2 green onions, chopped
  • 1 lime, cut into wedges


  1. Soak the rice noodles in warm water for 15-20 minutes, until they are soft and pliable. Drain and set aside.
  2. In a wok or large skillet, heat the vegetable oil over medium-high heat. Add the garlic and cook for 30 seconds, until fragrant.
  3. Add the eggs and scramble until cooked through. Add the shrimp and cook for 2-3 minutes until they turn pink.
  4. Add the soaked rice noodles and stir-fry for 2-3 minutes until the noodles are heated through.
  5. Add the bean sprouts and stir-fry for another minute.
  6. In a small bowl, mix together the fish sauce, tamarind paste, brown sugar, and red pepper flakes. Pour the sauce over the noodle mixture and stir until everything is coated in the sauce.
