SURINAME: ROTI WITH CHICKEN CURRY

Here’s a traditional recipe from Suriname called “Roti with Chicken Curry,” which is a popular dish in the country:

Ingredients:

For the Roti Dough:

  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup warm water
  • 2 tablespoons vegetable oil

For the Chicken Curry:

  • 1 lb (450g) chicken, cut into pieces
  • 2 tablespoons curry powder
  • 1 onion, finely chopped
  • 3 cloves of garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon chili powder (optional, for heat)
  • 1 cup chicken broth
  • 1 cup coconut milk
  • 2 potatoes, peeled and cubed
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions:

  1. In a large mixing bowl, combine the flour, baking powder, and salt for the roti dough. Gradually add warm water and knead until a soft, pliable dough forms. Divide the dough into small balls and brush each ball with vegetable oil. Allow the dough balls to rest for at least 30 minutes.
  2. In a large skillet or pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until they become translucent.
  3. Add the chicken pieces to the skillet and cook until they are browned on all sides. Stir in the curry powder, cumin, coriander, turmeric, and chili powder (if using). Cook for another minute to toast the spices and coat the chicken evenly.
  4. Pour in the chicken broth and coconut milk. Stir well to combine. Add the cubed potatoes and season with salt and pepper to taste. Reduce the heat to low, cover the pot, and let it simmer for about 30-40 minutes, or until the chicken is cooked through and the potatoes are tender.
  5. While the curry is simmering, take each dough ball and flatten it with a rolling pin to form thin, round roti bread. Heat a griddle or non-stick pan over medium heat and cook the roti on both sides until they are lightly browned and cooked through.
  6. Serve the roti with the chicken curry, and optionally, you can also include some additional side dishes like pickled vegetables or chutneys.
