SUDAN: MULLAH ROBE

Ingredients:

  • 500 grams beef, cut into cubes
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 2 tomatoes, chopped
  • 2 tablespoons tomato paste
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • 1 teaspoon paprika
  • 1 cinnamon stick
  • Salt and pepper, to taste
  • Water or beef broth, as needed
  • Fresh cilantro leaves, for garnish

Instructions:

  1. Heat the vegetable oil in a large pot or pressure cooker over medium heat. Add the chopped onion and sauté until it becomes translucent.
  2. Add the minced garlic to the pot and cook for about a minute until fragrant.
  3. Add the beef cubes to the pot and cook until they are browned on all sides.
  4. Stir in the chopped tomatoes and tomato paste. Mix well to combine with the beef.
  5. Add the ground cumin, ground coriander, ground turmeric, paprika, and cinnamon stick to the pot. Season with salt and pepper according to your taste. Stir to coat the beef and spices evenly.
  6. Pour enough water or beef broth into the pot to cover the beef cubes. Bring the mixture to a boil.
  7. Once boiling, reduce the heat to low and cover the pot. Let the stew simmer for about 1 to 1.5 hours, or until the beef becomes tender. If using a pressure cooker, cook for about 20-25 minutes after reaching pressure.
  8. Check the consistency of the stew and adjust the seasoning if needed. If the stew is too thick, add a little more water or broth.
  9. Once the beef is tender and the flavors have melded together, remove the pot from heat. Garnish with fresh cilantro leaves.
  10. Serve the Mullah Robe hot with Sudanese bread or steamed rice.
