SOMALIA: SUUGO SUQAAR

Ingredients:

  • 250 grams pasta (such as penne or spaghetti)
  • 250 grams beef or chicken, thinly sliced
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tomatoes, diced
  • 1 bell pepper, diced
  • 2 tablespoons tomato paste
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric
  • Salt and pepper to taste
  • Vegetable oil for cooking
  • Fresh cilantro or parsley for garnish (optional)

Instructions:

  1. Cook the pasta according to the package instructions until al dente. Drain and set aside.
  2. In a large frying pan or skillet, heat some vegetable oil over medium heat.
  3. Add the thinly sliced beef or chicken to the pan and cook until browned and cooked through. Remove from the pan and set aside.
  4. In the same pan, add a bit more oil if needed, then add the chopped onion and minced garlic. Sauté until the onion becomes translucent and fragrant.
  5. Add the diced tomatoes and bell pepper to the pan and cook until they start to soften.
  6. Stir in the tomato paste, ground cumin, paprika, turmeric, salt, and pepper. Cook for a minute to release the flavors.
  7. Add the cooked meat back to the pan and mix well with the tomato and spice mixture.
  8. Finally, add the cooked pasta to the pan and toss everything together until the pasta is well coated with the sauce and heated through.
  9. Remove from heat and garnish with fresh cilantro or parsley if desired.
  10. Serve the Suugo Suqaar hot as a main dish, accompanied by a salad or vegetables if desired.
