Ingredients:
For the chicken:
- 1 whole chicken, about 2-3 lbs
- 6-8 slices ginger
- 3 cloves garlic, crushed
- 2 green onions, cut into large pieces
- 1 tablespoon salt
- 2 tablespoons vegetable oil
The rice:
- 2 cups uncooked long-grain rice
- 3 cups chicken broth
- 3 slices ginger
- 2 cloves garlic, crushed

The chili sauce:
- 2-3 fresh red chilies, seeded and chopped
- 2 cloves garlic, chopped
- 1-inch piece ginger, peeled and chopped
- 1/4 cup chicken broth
- 1 tablespoon lime juice
- 1 tablespoon vegetable oil
- Salt to taste
Serving:
- Sliced cucumber
- Sliced green onion
Instructions:
- Rinse the chicken and pat it dry with paper towels.
- Stuff the chicken with 2-3 slices of ginger and 2 cloves of crushed garlic.
- In a large pot, add enough water to cover the chicken. Add the green onions, 4-6 slices of ginger, and 1 tablespoon of salt.
- Bring the water to a boil and carefully add the chicken to the pot. Reduce the heat to low and let the chicken simmer for 30-35 minutes, until it’s cooked through.
- Remove the chicken from the pot and let it cool.
- In another pot, heat 1 tablespoon of vegetable oil over medium heat. Add 3 slices of ginger and 2 cloves of crushed garlic and cook until fragrant.
- Add the uncooked rice to the pot and stir until it’s coated with the oil.
- Add 3 cups of chicken broth and 1 teaspoon of salt to the pot. Bring the mixture to a boil, then reduce the heat to low and cover the pot.
- Let the rice cook for about 15-20 minutes, until it’s fully cooked and fluffy.
- While the rice is cooking, prepare the chili sauce. In a small bowl, combine the chopped red chilies, chopped garlic, chopped ginger, chicken broth, lime juice, vegetable oil, and salt. Mix everything together well.
- Once the chicken has cooled, cut it into pieces and arrange them on a serving platter.
- Serve the chicken with the cooked rice and chili sauce on the side.
- Garnish with sliced cucumber and green onion.
