One popular dish from Singapore is Hainanese Chicken Rice, which is a flavorful and comforting meal consisting of poached chicken served with rice cooked in chicken broth and a side of chili sauce. Here’s a recipe:


For the chicken:

  • 1 whole chicken, about 2-3 lbs
  • 6-8 slices ginger
  • 3 cloves garlic, crushed
  • 2 green onions, cut into large pieces
  • 1 tablespoon salt
  • 2 tablespoons vegetable oil

The rice:

  • 2 cups uncooked long-grain rice
  • 3 cups chicken broth
  • 3 slices ginger
  • 2 cloves garlic, crushed
  • 1 teaspoon salt
  • 1 tablespoon vegetable oil

The chili sauce:

  • 2-3 fresh red chilies, seeded and chopped
  • 2 cloves garlic, chopped
  • 1-inch piece ginger, peeled and chopped
  • 1/4 cup chicken broth
  • 1 tablespoon lime juice
  • 1 tablespoon vegetable oil
  • Salt to taste


  • Sliced cucumber
  • Sliced green onion


  1. Rinse the chicken and pat it dry with paper towels.
  2. Stuff the chicken with 2-3 slices of ginger and 2 cloves of crushed garlic.
  3. In a large pot, add enough water to cover the chicken. Add the green onions, 4-6 slices of ginger, and 1 tablespoon of salt.
  4. Bring the water to a boil and carefully add the chicken to the pot. Reduce the heat to low and let the chicken simmer for 30-35 minutes, until it’s cooked through.
  5. Remove the chicken from the pot and let it cool.
  6. In another pot, heat 1 tablespoon of vegetable oil over medium heat. Add 3 slices of ginger and 2 cloves of crushed garlic and cook until fragrant.
  7. Add the uncooked rice to the pot and stir until it’s coated with the oil.
  8. Add 3 cups of chicken broth and 1 teaspoon of salt to the pot. Bring the mixture to a boil, then reduce the heat to low and cover the pot.
  9. Let the rice cook for about 15-20 minutes, until it’s fully cooked and fluffy.
  10. While the rice is cooking, prepare the chili sauce. In a small bowl, combine the chopped red chilies, chopped garlic, chopped ginger, chicken broth, lime juice, vegetable oil, and salt. Mix everything together well.
  11. Once the chicken has cooled, cut it into pieces and arrange them on a serving platter.
  12. Serve the chicken with the cooked rice and chili sauce on the side.
  13. Garnish with sliced cucumber and green onion.
