SEYCHELLES: OCTOPUS CURRY

Here’s a popular recipe from Seychelles called “Octopus Curry”:

Ingredients:

  • 500 grams of octopus, cleaned and cut into small pieces
  • 2 tablespoons of vegetable oil
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 tablespoon of ginger paste
  • 2 tomatoes, chopped
  • 1 tablespoon of curry powder
  • 1 teaspoon of turmeric powder
  • 1 cup of coconut milk
  • 1 cup of water
  • Salt and pepper, to taste
  • Fresh cilantro leaves, for garnish

Instructions:

  1. Heat the vegetable oil in a large pot or pan over medium heat. Add the chopped onion and sauté until it becomes translucent.
  2. Add the minced garlic and ginger paste to the pot. Cook for about a minute until fragrant.
  3. Add the chopped tomatoes to the pot and cook until they start to break down and release their juices.
  4. Stir in the curry powder and turmeric powder, coating the onions, garlic, and tomatoes with the spices.
  5. Add the octopus pieces to the pot and mix well, ensuring they are coated with the spice mixture. Cook for a few minutes until the octopus starts to turn opaque.
  6. Pour in the coconut milk and water. Stir gently to combine all the ingredients. Season with salt and pepper according to your taste.
  7. Reduce the heat to low and let the curry simmer for about 30-40 minutes, or until the octopus becomes tender and the flavors have melded together.
  8. Once the octopus is cooked and tender, remove the pot from heat. Garnish with fresh cilantro leaves.
  9. Serve the Octopus Curry hot with steamed rice or roti (Indian flatbread).
