• 1 pound beef tenderloin or sirloin steak, thinly sliced
  • 1 onion, thinly sliced
  • 8 ounces mushrooms, sliced
  • 2 cloves of garlic, minced
  • 2 tablespoons butter
  • 1 cup beef broth
  • 1 cup sour cream
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish
  • Egg noodles or rice, for serving

  1. In a large skillet, melt the butter over medium heat. Add the sliced onions and sauté until they are translucent and lightly golden.
  2. Add the sliced mushrooms to the skillet and cook until they have softened and released their moisture.
  3. Add the minced garlic to the skillet and sauté for another minute until fragrant.
  4. Push the onion, mushrooms, and garlic to one side of the skillet and add the thinly sliced beef to the other side. Cook the beef for a few minutes until browned on all sides.
  5. In a small bowl, whisk together the beef broth, sour cream, Dijon mustard, Worcestershire sauce, salt, and pepper.
  6. Pour the sauce mixture into the skillet with the beef, mushrooms, and onions. Stir well to combine.
  7. Reduce the heat to low and let the mixture simmer for about 10-15 minutes, stirring occasionally, until the beef is cooked through and the sauce has thickened.
  8. While the stroganoff is simmering, cook the egg noodles or rice according to the package instructions.
  9. Once the stroganoff is done, remove it from the heat. Taste and adjust the seasoning if needed.
  10. Serve the beef stroganoff over a bed of cooked egg noodles or rice. Garnish with chopped fresh parsley.
