- 1 large egg
- 1/2 cup warm water
- 2 tablespoons vegetable oil
For the filling:
- 3 large potatoes, peeled and diced
- 1/2 cup grated cheddar cheese
- 1/4 cup sour cream
- 1 small onion, chopped
- Salt and pepper to taste
For boiling:
- Water
- Salt
For serving:
- Sour cream
- Chopped chives
Instructions:
- In a large mixing bowl, combine the flour and salt. Make a well in the center and add the egg, water, and vegetable oil. Mix everything together until a dough forms.
- Knead the dough on a floured surface for about 5-7 minutes, until it becomes smooth and elastic.
- Cover the dough with a damp cloth and let it rest for 30 minutes.
- While the dough is resting, prepare the filling. Boil the diced potatoes in salted water until they are soft. Drain the water and mash the potatoes.
- Add the grated cheddar cheese, sour cream, chopped onion, salt, and pepper to the mashed potatoes. Mix everything together well.
- Roll out the dough on a floured surface to a thickness of about 1/8 inch.
- Cut the dough into rounds using a biscuit cutter or a glass.
- Place a small amount of the potato and cheese filling in the center of each dough round.
- Fold the dough in half and pinch the edges together to seal.
- Bring a large pot of salted water to a boil.
- Carefully drop the pierogi into the boiling water and cook them for about 3-4 minutes, until they float to the surface.
- Remove the pierogi from the water using a slotted spoon and place them on a plate.
- Serve the pierogi hot with a dollop of sour cream and chopped chives.
