Pierogi are a traditional Polish dish, consisting of boiled or fried dumplings with various fillings. Here’s a recipe for pierogi with a potato and cheese filling:

Ingredients:

For the dough:

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 large egg
  • 1/2 cup warm water
  • 2 tablespoons vegetable oil

For the filling:

  • 3 large potatoes, peeled and diced
  • 1/2 cup grated cheddar cheese
  • 1/4 cup sour cream
  • 1 small onion, chopped
  • Salt and pepper to taste

For boiling:

  • Water
  • Salt

For serving:

  • Sour cream
  • Chopped chives

Instructions:

  1. In a large mixing bowl, combine the flour and salt. Make a well in the center and add the egg, water, and vegetable oil. Mix everything together until a dough forms.
  2. Knead the dough on a floured surface for about 5-7 minutes, until it becomes smooth and elastic.
  3. Cover the dough with a damp cloth and let it rest for 30 minutes.
  4. While the dough is resting, prepare the filling. Boil the diced potatoes in salted water until they are soft. Drain the water and mash the potatoes.
  5. Add the grated cheddar cheese, sour cream, chopped onion, salt, and pepper to the mashed potatoes. Mix everything together well.
  6. Roll out the dough on a floured surface to a thickness of about 1/8 inch.
  7. Cut the dough into rounds using a biscuit cutter or a glass.
  8. Place a small amount of the potato and cheese filling in the center of each dough round.
  9. Fold the dough in half and pinch the edges together to seal.
  10. Bring a large pot of salted water to a boil.
  11. Carefully drop the pierogi into the boiling water and cook them for about 3-4 minutes, until they float to the surface.
  12. Remove the pierogi from the water using a slotted spoon and place them on a plate.
  13. Serve the pierogi hot with a dollop of sour cream and chopped chives.
