MOLDOVA: Mămăligă

Ingredients:

  • 2 cups yellow cornmeal
  • 4 cups water
  • 1 teaspoon salt
  • 1 cup grated cheese (such as brânză or feta)
  • Sour cream (optional, for serving)

Instructions:

  1. In a large pot, bring the water to a boil.
  2. Gradually add the cornmeal to the boiling water while stirring continuously to avoid lumps.
  3. Reduce the heat to low and continue stirring the mixture until it thickens and pulls away from the sides of the pot, similar to the consistency of mashed potatoes.
  4. Add salt and continue stirring for another 5 minutes to ensure the cornmeal is fully cooked.
  5. Remove the pot from the heat and let the mămăligă sit for a few minutes to set.
  6. Spread the mămăligă on a serving platter or individual plates.
  7. Sprinkle the grated cheese on top of the mămăligă while it is still warm so that it melts slightly.
  8. Serve the mămăligă hot as a main dish or as a side dish with various accompaniments such as meat, stews, or sausages.
  9. Optionally, you can serve mămăligă with a dollop of sour cream on top.
