LATVIA: Pīrāgi

A traditional Latvian dish is “Pīrāgi,” which are small baked pastries filled with bacon and onion. Here’s a recipe to make them:

Ingredients for the dough:

  • 500 grams of all-purpose flour
  • 250 grams of unsalted butter, softened
  • 250 grams of sour cream
  • 1 teaspoon of salt

Ingredients for the filling:

  • 200 grams of bacon, diced
  • 1 large onion, finely chopped
  • Salt and pepper to taste

Instructions:

  1. In a large bowl, combine the flour and salt. Cut the softened butter into small pieces and add it to the bowl.
  2. Use your hands or a pastry cutter to mix the butter into the flour until the mixture resembles coarse crumbs.
  3. Gradually add the sour cream to the mixture, kneading it in until a smooth dough forms.
  4. Divide the dough into two portions and shape them into balls. Wrap them in plastic wrap and refrigerate for about 30 minutes.
  5. In the meantime, prepare the filling. In a frying pan, cook the diced bacon until it becomes crispy. Remove the bacon from the pan and set it aside, leaving the bacon grease in the pan.
  6. In the same pan with the bacon grease, sauté the chopped onion until it becomes translucent and slightly golden. Remove from heat and let it cool.
  7. Preheat the oven to 180°C (350°F).
  8. On a lightly floured surface, roll out one portion of the dough to a thickness of about 1/4 inch (0.6 cm).
  9. Use a round cookie cutter or a glass to cut out circles from the rolled-out dough.
  10. Place a small amount of the bacon and onion filling in the center of each dough circle.
  11. Fold the edges of the dough over the filling, forming a crescent shape, and press the edges together to seal.
  12. Repeat steps 8-11 with the remaining dough and filling.
  13. Place the filled pastries on a baking sheet lined with parchment paper.
  14. Bake in the preheated oven for about 15-20 minutes or until the pastries turn golden brown.
  15. Remove from the oven and let the pīrāgi cool slightly before serving.

Pīrāgi can be enjoyed warm or at room temperature. They are often served as an appetizer or as a snack with sour cream on the side. Enjoy your homemade Latvian pīrāgi!
