A traditional Latvian dish is “Pīrāgi,” which are small baked pastries filled with bacon and onion. Here’s a recipe to make them:
Ingredients for the dough:
- 500 grams of all-purpose flour
- 250 grams of unsalted butter, softened
- 250 grams of sour cream
- 1 teaspoon of salt
Ingredients for the filling:
- 200 grams of bacon, diced
- 1 large onion, finely chopped
- Salt and pepper to taste
Instructions:
- In a large bowl, combine the flour and salt. Cut the softened butter into small pieces and add it to the bowl.
- Use your hands or a pastry cutter to mix the butter into the flour until the mixture resembles coarse crumbs.
- Gradually add the sour cream to the mixture, kneading it in until a smooth dough forms.
- Divide the dough into two portions and shape them into balls. Wrap them in plastic wrap and refrigerate for about 30 minutes.
- In the meantime, prepare the filling. In a frying pan, cook the diced bacon until it becomes crispy. Remove the bacon from the pan and set it aside, leaving the bacon grease in the pan.
- In the same pan with the bacon grease, sauté the chopped onion until it becomes translucent and slightly golden. Remove from heat and let it cool.
- Preheat the oven to 180°C (350°F).
- On a lightly floured surface, roll out one portion of the dough to a thickness of about 1/4 inch (0.6 cm).
- Use a round cookie cutter or a glass to cut out circles from the rolled-out dough.
- Place a small amount of the bacon and onion filling in the center of each dough circle.
- Fold the edges of the dough over the filling, forming a crescent shape, and press the edges together to seal.
- Repeat steps 8-11 with the remaining dough and filling.
- Place the filled pastries on a baking sheet lined with parchment paper.
- Bake in the preheated oven for about 15-20 minutes or until the pastries turn golden brown.
- Remove from the oven and let the pīrāgi cool slightly before serving.
Pīrāgi can be enjoyed warm or at room temperature. They are often served as an appetizer or as a snack with sour cream on the side. Enjoy your homemade Latvian pīrāgi!
