INDONESIA: NASI GORENG

Here’s a classic Indonesian recipe called Nasi Goreng, which is a flavorful and fragrant fried rice dish:

Recipe: Nasi Goreng (Indonesian Fried Rice)

Ingredients:

  • 3 cups cooked jasmine rice (preferably cooked a day in advance and refrigerated)
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 2 red chilies, deseeded and finely chopped (adjust according to spice preference)
  • 100 grams (3.5 oz) chicken breast or shrimp, cooked and diced (optional)
  • 2 eggs, lightly beaten
  • 2 tablespoons sweet soy sauce (kecap manis)
  • 1 tablespoon soy sauce
  • 1 teaspoon shrimp paste (terasi), dissolved in 1 tablespoon of water (optional)
  • 1 teaspoon tamarind paste dissolved in 1 tablespoon of water
  • 1 cup mixed vegetables (such as carrots, peas, and bell peppers), diced
  • Salt and pepper to taste
  • Sliced cucumber and tomato, for garnish
  • Fried shallots, for garnish (optional)
  • Fresh cilantro or parsley, for garnish

Instructions:

  1. Heat the vegetable oil in a large wok or frying pan over medium heat.
  2. Add the minced garlic, chopped onion, and red chilies to the pan. Sauté until the onions are translucent and fragrant.
  3. If using chicken breast or shrimp, add it to the pan and cook until it’s fully cooked through.
  4. Push the ingredients to one side of the pan and pour the beaten eggs into the empty space. Scramble the eggs until they’re cooked.
  5. Add the cold cooked rice to the pan and break up any clumps with a spatula. Stir-fry the rice with the other ingredients for a few minutes.
  6. Drizzle the sweet soy sauce and regular soy sauce over the rice. Add the dissolved shrimp paste (if using) and tamarind mixture. Mix well to evenly coat the rice.
  7. Stir in the mixed vegetables and cook for a few minutes until they’re tender but still crisp.
  8. Season the Nasi Goreng with salt and pepper to taste. Adjust the seasoning or add more soy sauce if desired.
  9. Remove the pan from the heat and garnish the Nasi Goreng with sliced cucumber, tomato, fried shallots (if using), and fresh cilantro or parsley.
  10. Serve the Nasi Goreng hot and enjoy it as a main dish or with additional toppings like fried egg, prawn crackers, or sambal (spicy chili paste) on the side.
