GUAM: KALAGUEN

Here is a simple recipe for a traditional dish from Guam called “Kelaguen,” which is a flavorful chicken or seafood salad:

Ingredients:

  • 500 grams of boneless chicken breasts or seafood (shrimp, squid, or fish), cooked and diced
  • 2 lemons, juiced
  • 1 medium-sized onion, finely chopped
  • 2 green onions, chopped
  • 2 tablespoons of soy sauce
  • 2 tablespoons of grated coconut (fresh or desiccated)
  • 1-2 hot chili peppers (optional), finely chopped
  • Salt and pepper to taste

Instructions:

  1. In a bowl, combine the cooked and diced chicken or seafood with the lemon juice and let it marinate for about 10 minutes.
  2. Add the finely chopped onion, green onions, and chili peppers (if using) to the bowl.
  3. Stir in the soy sauce and grated coconut.
  4. Season with salt and pepper to taste and mix everything together.
  5. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
  6. Taste and adjust the seasoning if needed.
  7. Serve the Kelaguen chilled as a salad or as a filling in tortillas or lettuce wraps.
