GREECE: SPANAKOPITA

Ingredients:

  • 10 ounces fresh spinach, washed and chopped
  • 1 cup feta cheese, crumbled
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • 10 sheets phyllo dough
  • 1/2 cup melted butter

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a large pan, heat olive oil over medium heat. Add the onion and garlic, and sauté until translucent.
  3. Add the spinach to the pan and cook until wilted. Remove from heat and let it cool.
  4. In a bowl, combine the cooked spinach, feta cheese, salt, and pepper.
  5. Brush a baking dish with melted butter.
  6. Layer half of the phyllo sheets in the baking dish, brushing each sheet with melted butter.
  7. Spread the spinach and feta mixture evenly over the phyllo layers.
  8. Layer the remaining phyllo sheets on top, again brushing each sheet with melted butter.
  9. Trim any excess phyllo dough hanging over the edges of the dish.
  10. Score the top layer of the phyllo into desired serving portions.
  11. Bake in the preheated oven for about 30 minutes or until the phyllo turns golden brown.
  12. Remove from the oven and let it cool for a few minutes before serving.
