GEORGIA: KHINKALI

Ingredients:

For the dough:

  • 3 cups all-purpose flour
  • 1 cup warm water
  • 1 teaspoon salt

For the filling:

  • 1 pound ground beef or a mixture of beef and pork
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh cilantro, finely chopped
  • 1 tablespoon fresh parsley, finely chopped
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt

For cooking:

  • Water
  • Salt

Instructions:

  1. In a large mixing bowl, combine the flour and salt. Gradually add warm water while stirring until a dough forms.
  2. Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic. Cover the dough with a clean towel and let it rest for 30 minutes.
  3. In a separate bowl, combine the ground beef (or beef and pork mixture) with the chopped onion, minced garlic, cilantro, parsley, ground coriander, ground cumin, black pepper, and salt. Mix well to combine.
  4. Take a small portion of the dough and roll it out into a circle about 4-5 inches in diameter. Place a tablespoon of the meat filling in the center of the dough circle.
  5. Lift the edges of the dough circle and pinch them together, twisting and folding the top to create a pleated shape. Make sure to seal the dumpling tightly to prevent the filling from leaking during cooking. Repeat this process with the remaining dough and filling.
  6. Bring a large pot of water to a boil and add salt to the water.
  7. Carefully drop the Khinkali into the boiling water, ensuring they are not overcrowded. Cook for about 10-12 minutes, or until the dough is cooked through and the meat filling is cooked.
  8. Using a slotted spoon, remove the cooked Khinkali from the pot and place them on a serving platter.
  9. Serve the Khinkali hot, traditionally placing them in a large serving bowl. To eat, hold the Khinkali by the twisted top and take small bites, being cautious of the hot broth inside. You can also serve them with sour cream or a spicy dipping sauce on the side.
