ECUADOR: Ceviche de Camarón

One popular dish from Ecuador is “Ceviche de Camarón,” which is a refreshing shrimp ceviche. It’s made with cooked shrimp marinated in a citrusy mixture and served with onions, tomatoes, and cilantro. Here’s a recipe for Ceviche de Camarón:

Ingredients:

  • 1 pound medium-sized shrimp, peeled and deveined
  • 1 red onion, thinly sliced
  • 3 tomatoes, diced
  • 1 bell pepper, diced
  • 1 jalapeño pepper, seeds removed and finely chopped (optional)
  • 1 bunch of fresh cilantro, chopped
  • Juice of 6 lemons
  • Juice of 2 limes
  • 2 tablespoons ketchup
  • 2 tablespoons tomato sauce
  • Salt and pepper to taste
  • Plantain chips or toasted corn nuts (for serving)

Instructions:

  1. Bring a large pot of salted water to a boil. Add the shrimp and cook for about 2-3 minutes until they turn pink and opaque. Be careful not to overcook them. Drain the shrimp and let them cool.
  2. In a large bowl, combine the red onion, tomatoes, bell pepper, jalapeño pepper (if using), and chopped cilantro. Mix well.
  3. Cut the cooled shrimp into bite-sized pieces and add them to the bowl with the vegetables.
  4. In a separate small bowl, whisk together the lemon juice, lime juice, ketchup, and tomato sauce. Season with salt and pepper to taste.
  5. Pour the citrus juice mixture over the shrimp and vegetables. Stir gently to combine, ensuring that all the ingredients are coated in the marinade.
  6. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld together and the shrimp to further “cook” in the citrus juices.
  7. Once chilled and marinated, taste the ceviche and adjust the seasoning if necessary.
  8. Serve the Ceviche de Camarón in bowls or glasses, garnished with additional cilantro leaves. Accompany it with plantain chips or toasted corn nuts for added crunch.
