Ingredients:

  • 2 cups cooked white rice (preferably day-old)
  • 1 cup cooked black beans (or canned black beans, rinsed and drained)
  • 1 small onion, finely chopped
  • 1 red bell pepper, finely chopped
  • 2 cloves of garlic, minced
  • 2 tablespoons vegetable oil
  • 2 tablespoons Lizano sauce (a Costa Rican condiment, available in international grocery stores)
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Sliced avocado (for serving)

Instructions:

  1. Heat the vegetable oil in a large skillet or frying pan over medium heat.
  2. Add the chopped onion, red bell pepper, and minced garlic to the pan. Sauté until the vegetables are softened and the onion is translucent.
  3. Add the cooked black beans to the pan and stir well to combine with the vegetables. Cook for a few minutes until the beans are heated through.
  4. Add the cooked white rice to the pan. Gently break up any clumps of rice and stir to combine it with the beans and vegetables.
  5. Add the Lizano sauce to the pan and stir well to distribute the flavors. If you don’t have Lizano sauce, you can substitute it with Worcestershire sauce or a combination of equal parts soy sauce and vinegar.
  6. Season with salt and pepper to taste. Be careful with the salt since the beans might already be seasoned.
  7. Cook the Gallo Pinto for a few more minutes, stirring occasionally, until everything is well heated and the flavors have melded together.
  8. Remove from heat and garnish with fresh chopped cilantro.
  9. Serve the Gallo Pinto hot, accompanied by sliced avocado on the side. It can be enjoyed as a breakfast dish or as a side dish with other main meals.
