COMOROS: COCONUT CHICKEN CURRY

Ingredients:

  • 1 kg chicken, cut into pieces
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 2 tomatoes, chopped
  • 1 can (400 ml) coconut milk
  • 2 tablespoons curry powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh coriander leaves for garnish
  • Cooked rice, for serving

Instructions:

  1. Heat the vegetable oil in a large pot or deep pan over medium heat. Add the chopped onion and sauté until translucent.
  2. Add the minced garlic and grated ginger to the pot and cook for another minute, stirring constantly.
  3. Place the chicken pieces into the pot and cook until they are lightly browned on all sides.
  4. Add the chopped tomatoes and cook for a few minutes until they start to soften.
  5. In a small bowl, mix together the curry powder, turmeric powder, and paprika. Sprinkle this spice mixture over the chicken and tomatoes, stirring well to coat everything evenly.
  6. Pour in the coconut milk and stir to combine all the ingredients. Season with salt and pepper to taste.
  7. Reduce the heat to low, cover the pot, and simmer for about 30-40 minutes or until the chicken is tender and fully cooked, stirring occasionally.
  8. Once the curry is ready, remove it from the heat and let it sit for a few minutes to cool slightly.
  9. Serve the Comorian Coconut Chicken Curry over a bed of cooked rice. Garnish with fresh coriander leaves for added flavor and presentation.
