BULGARIA: BULGARIAN SHOPSKA SALAD

Ingredients:

  • 4 ripe tomatoes, diced
  • 2 cucumbers, diced
  • 1 red onion, thinly sliced
  • 1 green pepper, diced
  • 1/2 cup (120g) crumbled feta cheese
  • 1/4 cup (60ml) olive oil
  • 2 tbsp red wine vinegar
  • Salt and pepper, to taste
  • Fresh parsley or dill, chopped (optional)

Instructions:

  1. Combine the diced tomatoes, cucumbers, red onion, and green pepper in a large bowl.
  2. Add the crumbled feta cheese to the bowl and gently toss to combine.
  3. In a separate bowl, whisk together the olive oil and red wine vinegar.
  4. Pour the dressing over the salad and toss to coat evenly.
  5. Season the salad with salt and pepper to taste.
  6. Garnish with chopped parsley or dill, if desired.
  7. Serve the Bulgarian Shopska Salad chilled as a refreshing appetizer or side dish.
