ANDORRA: TRINXAT

One popular dish from Andorra is “Trinxat,” a traditional Andorran potato and cabbage dish. Here’s a concise version of the recipe:

Ingredients:

  • 4 medium potatoes, peeled and cut into chunks
  • 1/2 small head of cabbage, shredded
  • 4 slices of bacon, chopped
  • 2 cloves of garlic, minced
  • Salt and pepper to taste

Instructions:

  1. Boil the potato chunks in a pot of salted water until they are tender. Drain and set aside.
  2. In a large pan, cook the chopped bacon over medium heat until it becomes crispy. Remove the bacon from the pan and set it aside, leaving the bacon fat in the pan.
  3. In the same pan, add the minced garlic and shredded cabbage. Sauté until the cabbage is wilted and cooked through.
  4. Add the cooked potatoes to the pan and mash them together with the cabbage using a potato masher or fork.
  5. Season with salt and pepper to taste. Stir well to combine.
  6. Transfer the mixture to a serving dish and sprinkle the crispy bacon on top.
  7. Serve the Trinxat hot as a side dish or a main course.
